My Favorite New Zealand Trifle Recipe
One of the great joys of authentic travel is getting to know local people in the area you’re visiting. I’ve lived in New Zealand and watched tourists rush around the country visiting the same sights that every other overseas visitor is seeing (the places where big buses are stacked cheek-to-jowl in the parking lot). These experiences don’t allow time to meet real New Zealanders, savor a great Kiwi Savignon Blanc, and stand back and absorb the natural beauty of this amazing country.
Authentic luxury travelers will rent a car, meander off the tourist track, stay at luxurious country lodges, enjoy the local cuisine, and – I’m willing to bet – come away with at least one or favorite recipes.
Here’s My Favorite New Zealand Trifle Recipe
(with thanks to Auntie Helen in Christchurch):
1 sponge cake or yellow layer cake
raspberry jam
1/3 cup (80ml) sherry
1 package Bird’s custard or vanilla pudding, any brand, prepared as directed
1 cup crumbled macaroons
several cups of diced fruit – fresh, frozen or tinned (canned)
whipped cream
Places slices of cake spread with raspberry jam in the bottom of a large bowl and sprinkle with sherry. Cover with a layer of mixed fruit. Your choice of fruit will depend on the season. Apricots, peaches, strawberries, raspberries, mandarin oranges, and kiwifruit are all good. On top of fruit, spread half of the custard mixture to which crumbled macaroons have been added. Repeat layers, reserving some fruit. Cover top layer with whipped cream and garnish with reserved fruit.
Chill.
This traditional dessert is almost too beautiful to eat. Mind you, I said “almost.”
Pavlova is another beautiful traditional dessert in New Zealand and Australia.
